I've been invited to my first ever cookie exchange. Yes, you read right, my first ever. And I'm freaking out! I can make exactly two types of cookies well and they're both variations on sugar cookies. Not exactly something to write home about! So, I'm begging for help. (The cookies in the photo are from a local bakery. Let's not talk about how often I go there, okay? Okay.) I'm desperate. Truly. There are some really terrific bakers coming to this shindig and I'd like at least pretend to wow them. I'm so desperate, I'm resorting to bribery.
For your help, I'm giving away a five-pack of my notecards. All you have to do is leave a link to a recipe or the recipe itself in the comments section. This will be open until the 17th of December and you can enter as many times as you want, you just have to submit a different recipe each time. ReplyDeleteI Just went to a cookie exchange this past weekend where we had to bring 9 dozen cookies. This is my 4th year attending and I love it. It is fun to sample a variety of cookies and see what everyone comes up with. My initial thought is to tell you not to try something new during a cookie exchange prep (if you have to make several dozen) because it will stress you out but I have confidence in you and your abilities to branch out a bit from the sugar cookie! Channel your inner Nonny and you will be fine!

ReplyDeleteAmerica's Test Kitchen Perfect Chocolate Chip Cookies
1 3/4 cups (83/4 ounces) all-purpose flour
1/2 teaspoon baking soda
14 tablespoons unsalted butter
3/4 cup packed (51/4 ounces) dark brown sugar
1/2 cup (31/2 ounces) granulated sugar
1 teaspoon salt
2 teaspoons vanilla extract
1 large egg plus 1 large yolk
1 1/4 cups (71/2 ounces) semisweet chocolate chips or chunks
3/4 cup pecans or walnuts, toasted and chopped (optional)
1. Adjust oven rack to middle position and heat oven to 375 degrees. Line 2 baking sheets with parchment paper. Whisk flour and baking soda together in medium bowl; set aside.
2. Melt 10 tablespoons butter in 10‑inch skillet over medium-high heat. Continue cooking, swirling pan constantly, until butter is dark golden brown and has nutty aroma, 1 to 3 minutes. Transfer browned butter to large heatproof bowl. Add remaining 4 tablespoons butter and stir until completely melted.
3. Add brown sugar, granulated sugar, salt, and vanilla to melted butter; whisk until fully incorporated. Add egg and egg yolk; whisk until mixture is smooth with no sugar lumps remaining, about 30 seconds. Let mixture stand for 3 minutes, then whisk for 30 seconds. Repeat process of resting and whisking 2 more times until mixture is thick, smooth, and shiny. Using rubber spatula, stir in flour mixture until just combined, about 1 minute. Stir in chocolate chips and nuts, if using. Give dough final stir to ensure that no flour pockets remain and ingredients are evenly distributed.
4. Working with 3 tablespoons of dough at a time, roll into balls and place 2 inches apart on prepared baking sheets.
5. Bake 1 sheet at a time until cookies are golden brown and still puffy and edges have begun to set but centers are still soft, 10 to 14 minutes, rotating baking sheet halfway through baking. Transfer baking sheet to wire rack; let cookies cool to room temperature.
*Avoid using a nonstick skillet to brown the butter; the dark color of the nonstick coating makes it difficult to gauge when the butter is sufficiently browned. Use fresh, moist brown sugar, as hardened brown sugar will make the cookies too dry. This recipe works with light brown sugar, but the cookies will be less full-flavored.

Ryan's family has these snickerdoodle cookies that make my mouth water every time I even think about them they are so good. One of the key ingredients is butter-flavored shortening, which I'm not sure the availability of in the mediterranean. But here's the recipe:
ReplyDelete1/2 c. butter flavored crisco
1/2 c. butter
1 1/2 c. white sugar
2 eggs
2 3/4 c. sifted flour
1 t. cream of tartar
1 t. baking soda
1/4 t. salt
3 T sugar
3 t. cinnamon
Preheat oven to 375. Mix shortening, butter, sugar, and eggs together thoroughly. In separate bowl sift flour, cream of tartar, baking soda, and salt. Add to sugar mixture. Roll dough into small balls, and coat in mixture of cinnamon and sugar in a small bowl. Place on ungreased cookie sheet. Bake 7-10 minutes or until edges barely start to brown but still soft in middle.
Delish! I have a few more recipes I'm thinking of sharing, but might try it on FB because I could just send you my digital recipe cards for them. We shall see!
